They are very different. The Accademia is small and most people go to see the David, so an hour is enough. The Uffizi is one of the great art museums of the world and deserves two to three hours with a guide. If you only have time for one tour, the combined highlights tour is a good compromise.

Both the Uffizi and the Accademia are closed on Mondays, and Tuesdays are busy as a result. Early morning on a weekday is the calmest. Booking a skip-the-line tour saves you the ticket queue whichever day you go.
